A creamy and fluffy berry croissant bake that’s perfect for brunch or a cozy breakfast at home, bursting with vibrant flavors.

Ingredients

Scale
  • 6 croissants (Use slightly stale for optimal texture.)
  • 2 cups mixed berries (A mix of blueberries, raspberries, and strawberries works beautifully.)
  • 1.5 cups whole milk (Low-fat milk can be a lighter alternative.)
  • 1.5 cups heavy cream (Substitute half with whole milk if desired.)
  • 4 large eggs (Substitute with mashed banana or flax eggs for a vegan option.)
  • 1 tsp vanilla extract (Pure extract is recommended for the best taste.)
  • 0.33 cups granulated sugar (Feel free to reduce for less sweetness or substitute with coconut sugar.)
  • 1 tbsp lemon zest (Optional, brightens the flavor.)
  • Powdered sugar (For dusting before serving.)

Instructions

  1. Prepare the Croissants: Preheat your oven to 350°F (175°C) and cut the croissants into large pieces.
  2. Combine the Berries: Toss mixed berries with a bit of granulated sugar and set aside.
  3. Whisk the Creamy Mixture: In a bowl, whisk together eggs, whole milk, heavy cream, vanilla extract, sugar, and lemon zest.
  4. Assemble the Bake: Layer croissant pieces in a baking dish and sprinkle with berry mixture. Pour the creamy egg mixture over the top.
  5. Let It Soak: Allow the assembled dish to sit at room temperature for about 15 minutes.
  6. Bake to Perfection: Bake for 35-40 minutes until the top is golden brown and custard is set.
  7. Cool and Dust: Let cool for 10 minutes and dust with powdered sugar before serving.

Notes

For added indulgence, serve with whipped cream or vanilla ice cream. Leftovers can be stored in the fridge for up to 2 days.
