Berry Chantilly Cake

A light and refreshing cake layered with fluffy whipped cream and a medley of fresh berries, perfect for any celebration.

  • 1 box of vanilla cake mix
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup mascarpone cheese
  • Optional: mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). In a large bowl, prepare the cake mix according to package instructions. Pour the batter evenly into two 9-inch round cake pans and bake until golden brown, about 25-30 minutes. Once baked, let the layers cool in the pans for a few minutes before transferring them to a wire rack to cool completely.
  2. While the cakes cool, whip the heavy cream in a mixing bowl. As you whip, gradually add the powdered sugar and vanilla extract. Continue whipping until soft peaks form. Gently fold in the mascarpone cheese until the mixture is smooth and creamy, taking care not to deflate it.
  3. Once the cakes are completely cooled, place one layer on a serving plate. Generously spread a layer of Chantilly cream over the top, creating a soft bed for the berries.
  4. Top the Chantilly cream with a colorful assortment of mixed berries. Feel free to be generous here—the more berries, the better!
  5. Place the second cake layer on top of the first. Repeat the process of spreading Chantilly cream and layering with berries.
  6. Decorate the top of the cake with a swirl of additional Chantilly cream and an artful arrangement of berries. Add a few mint leaves for a refreshing garnish, if desired.
  7. Once prepared, slice the cake into generous pieces and serve chilled. Enjoy!

Notes

Serve with vanilla ice cream or berry sauce for an extra treat. Store leftovers in an airtight container in the refrigerator for up to 3 days.
