A hearty and comforting beef sausage casserole filled with tender sausages and robust vegetables, perfect for cozy occasions.

Ingredients

  • 1 lb Beef sausages
  • 1 Onion, chopped
  • 2 Carrots, diced
  • 2 stalks Celery, chopped
  • 2 cloves Garlic, minced
  • 2 Potatoes, cubed
  • 1 can Canned tomatoes
  • 2 cups Beef broth
  • 1 tsp Thyme
  • 2 Bay leaves
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your slow cooker.
  2. Brown the beef sausages in a skillet until golden.
  3. Sauté the onions, carrots, celery, and garlic until soft.
  4. Layer the sautéed vegetables in the slow cooker.
  5. Add the browned sausages on top of the vegetables.
  6. Combine the canned tomatoes, beef broth, thyme, bay leaves, salt, and pepper.
  7. Cook on low for 6-8 hours.
  8. Serve hot and enjoy!

Notes

Leftovers can be refrigerated for up to three days or frozen for three months. Reheat thoroughly before serving.
