Hearty Beef Lombardi Casserole

A comforting casserole brimming with seasoned ground beef, zesty tomato sauce, and topped with melted cheese, perfect for family dinners.

Ingredients

  • 1 lb Lean Ground Beef or Ground Turkey
  • 14.5 oz Diced Tomatoes
  • 10 oz Diced Tomatoes and Green Chiles
  • 6 oz Tomato Paste
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 12 oz Egg Noodles
  • 1 cup Sour Cream or Plain Greek Yogurt
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Grated Parmesan Cheese
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Brown the Ground Beef or Turkey in a large skillet over medium heat until fully cooked.
  2. Combine the diced tomatoes, diced tomatoes and green chiles, and tomato paste with the cooked meat. Add garlic powder, onion powder, salt, and black pepper; allow to simmer for 5 minutes.
  3. Cook the egg noodles in salted boiling water until al dente; drain and set aside.
  4. Mix in the sour cream or Greek yogurt into the meat and tomato mixture.
  5. Combine the cooked egg noodles with the meat sauce mixture.
  6. Layer half of the noodle mixture in a greased casserole dish, top with cheddar cheese, then add the remaining noodle mixture and layer with mozzarella and Parmesan cheese.
  7. Bake at 350°F (175°C) for 25-30 minutes until cheese is bubbly and golden.
  8. Cool for 10 minutes before serving.

Notes

Serve with a side salad or crusty garlic bread.
