Delicious homemade beef enchiladas filled with seasoned ground beef and black beans, topped with gooey cheese and enchilada sauce.

Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chopped onion
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef and chopped onion in a skillet over medium heat.
  3. Mix in drained black beans, cumin, chili powder, salt, and pepper with the beef mixture.
  4. Prepare a small amount of enchilada sauce at the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and a sprinkle of shredded cheese, then roll them up tightly.
  6. Assemble the rolled tortillas in the dish, pouring the remaining enchilada sauce over the top and sprinkling with more cheese.
  7. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  8. Serve hot, enjoying the melted cheese and savory filling.

Notes

Feel free to adjust the heat level by adding jalapeños or using spicier sauce. You can make these ahead of time and bake before serving.
