Hearty beef enchiladas that combine flavors, textures, and warmth for a comforting meal.

Ingredients

  • 2 cups cooked shredded beef
  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onions in olive oil over medium heat until soft.
  3. Combine shredded beef, cumin, salt, and pepper in the skillet, stirring until well combined.
  4. Prepare the corn tortillas by warming them slightly.
  5. Fill each tortilla with the beef mixture, roll, and place seam-side down in a baking dish.
  6. Pour enchilada sauce over the rolled tortillas.
  7. Add shredded cheese on top.
  8. Bake for about 20-25 minutes until the cheese is melted and bubbly.
  9. Remove from the oven and garnish with chopped cilantro if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
