A flavorful and tender Beef Barbacoa dish perfect for gatherings, served on warm tortillas.

Ingredients

  • 3 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 teaspoon chipotle powder
  • 1/4 cup apple cider vinegar
  • 1/4 cup beef broth
  • Salt and pepper to taste
  • Tortillas for serving
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until nicely browned.
  2. Remove the beef and add the chopped onion and minced garlic to the pot. Sauté until fragrant, about 2-3 minutes.
  3. Stir in the cumin, oregano, paprika, and chipotle powder, allowing the spices to toast lightly for a minute.
  4. Return the beef to the pot, then add the apple cider vinegar and beef broth. Season with salt and pepper to taste.
  5. Cover and simmer on low heat for about 240-360 minutes until the beef is tender and shreds easily with a fork.
  6. Once cooked, shred the beef with two forks and mix with the juices in the pot.
  7. Serve on warm tortillas, garnished with fresh cilantro for an added burst of flavor and color.

Notes

For a spicier kick, add chipotle peppers in adobo sauce or experiment with different spices.
