A delightful Banana Crumb Cake that elevates traditional banana bread with a crumbly topping, perfect for gatherings or breakfast.

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1 cup oats
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
  4. Whisk together the all-purpose flour, baking soda, and salt, then gradually add to the banana mixture.
  5. Mix the brown sugar, oats, and cinnamon to create the crumb topping.
  6. Pour the banana cake batter into the prepared baking pan and sprinkle the crumb topping over it.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan, then slice and serve warm or at room temperature.

Notes
