A delightful and nutritious dish featuring eggs baked in ripe avocados, perfect for brunch or a light dinner.

Ingredients

  • 2 ripe avocados
  • 4 eggs
  • Salt to taste
  • Pepper to taste
  • Optional toppings: cheese, herbs (like cilantro or chives), hot sauce

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Halve the avocados and remove the pit.
  3. Create room for the eggs by scooping out a little extra avocado from the center of each half.
  4. Prepare the baking dish by placing the avocado halves securely.
  5. Crack an egg into each avocado half.
  6. Season the eggs with salt and pepper.
  7. Bake for 15-20 minutes, until the egg whites are set but yolks are slightly runny.
  8. Add desired toppings.
  9. Serve warm and enjoy!
