A comforting and indulgent grilled cheese sandwich enhanced with crispy bacon and sweet, caramelized onions.

Ingredients

  • 4 slices of bread (sourdough or your choice)
  • 4 slices of bacon
  • 1 medium onion, thinly sliced
  • 2 tablespoons butter
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Gouda cheese
  • Salt and pepper to taste
  • Optional: 1 teaspoon balsamic vinegar for added flavor

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, then transfer to a plate to drain excess oil.
  2. Caramelize the onions in the bacon grease over medium-low heat, stirring occasionally until soft and caramelized, about 15-20 minutes.
  3. Butter one side of each slice of bread liberally.
  4. Assemble the sandwich by laying two slices of bread, butter-side down, and layering with cheese, caramelized onions, and bacon.
  5. Cook the first side for about 3-4 minutes until golden brown and cheese starts to melt.
  6. Flip the sandwiches carefully and cook the other side for another 3-4 minutes until golden brown and cheese is melted.
  7. Rest the sandwiches for a minute before slicing in half.
  8. Serve immediately and enjoy.

Notes

These sandwiches pair well with crispy fries or a light salad, and can also be enjoyed with tomato soup.
