A delightful homemade liqueur that perfectly embodies the sunny spirit of Italy, made from organic lemons.

Ingredients

  • 8 medium-large organic lemons
  • 4 cups freshly squeezed lemon juice
  • 4 ¾ cups water
  • 2.43 lbs white sugar

Instructions

  1. Wash and peel the lemons thoroughly under cold water. Use a vegetable peeler to carefully peel off the yellow zest.
  2. Place the lemon peels in a large sealed glass jar. Pour in the freshly squeezed lemon juice over the peels and seal the jar.
  3. Strain the mixture after 25 days through a fine mesh strainer into a bowl, discarding the lemon peels.
  4. Heat 4 cups of water in a pot, then add the white sugar and stir until completely dissolved to make a sweet syrup.
  5. Combine the warm sugar syrup with the strained lemon infusion, stirring well.
  6. Cool the mixture to room temperature, then bottle it in glass containers and refrigerate.

Notes

Serve ice-cold as a digestif after meals. Pair with traditional Italian desserts or mix into cocktails.
