A one-pot masterpiece that brings together shrimp, smoked sausage, and a medley of vegetables, infused with Cajun spices for a delightful experience.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups long-grain rice
  • 1 can diced tomatoes (14.5 oz)
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Sauté the sausage in a large pot with a little oil over medium heat until browned.
  2. Add the chopped bell pepper, onion, celery, and garlic. Sauté until the vegetables are tender.
  3. Stir in the shrimp and cook until they turn pink.
  4. Add the chicken broth, diced tomatoes, rice, Cajun seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the flavors.
  6. Remove from heat, let sit for a few minutes. Fluff with a fork and garnish with chopped green onions before serving.
