A refreshing summer salad featuring crisp cucumbers in a tangy dress, perfect for picnics and gatherings.

Ingredients

  • 2 large cucumbers
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, chopped
  • Sesame seeds for garnish

Instructions

  1. Slice the cucumbers thinly and place them in a large bowl.
  2. Whisk together rice vinegar, soy sauce, sesame oil, sugar, ginger, and red pepper flakes in a separate bowl.
  3. Pour the prepared dressing over the cucumbers and toss to combine.
  4. Add the chopped green onions and mix again.
  5. Let the salad sit for at least 15 minutes to enhance the flavors.
  6. Serve chilled, garnished with sesame seeds.

Notes
