A delightful twist on traditional apple fritters, this Apple Fritter Focaccia features soft, airy dough, a cinnamon-spiced apple filling, and a glossy glaze.

  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/2 cups warm water (110°F)
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 medium apples, peeled and diced
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice
  • 1/4 cup powdered sugar
  • 12 tbsp milk (for glaze)
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a large bowl. Let it sit for 5-10 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms that pulls away from the sides of the bowl.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Mix the diced apples, cinnamon, brown sugar, and lemon juice in a separate bowl to prepare the apple filling.
  6. Preheat your oven to 375°F (190°C).
  7. Spread the risen dough onto a greased baking sheet, creating dimples with your fingers.
  8. Add the apple filling evenly over the dough, pressing it slightly into the surface.
  9. Bake for 25-30 minutes or until golden brown and the apples are tender.
  10. Cool slightly, then mix powdered sugar with milk to create a glaze and drizzle it over the focaccia.

Notes

For freshness, use Granny Smith or Honeycrisp apples. Experiment with spices like nutmeg or cardamom for a unique flavor.
