A vibrant and satisfying salad celebrating autumn flavors with tender kale, tart apples, sweet cranberries, and crispy bacon.

Ingredients

  • 6 cups kale, stems removed and leaves chopped
  • 1 large apple, cored and diced (preferably Granny Smith)
  • 1/2 cup dried cranberries
  • 1/2 cup cooked bacon, crumbled (about 45 slices)
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup walnuts or pecans, toasted
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper, to taste

Instructions

  1. Prepare the kale by removing the tough stems and chopping the leaves into bite-sized pieces. Place the chopped kale in a large mixing bowl.
  2. Massage the kale with a pinch of salt for about 2-3 minutes until tender and slightly wilted.
  3. Add the diced apple, dried cranberries, crumbled bacon, sliced red onion, and toasted nuts to the bowl with the kale. If using, add feta cheese now.
  4. Whisk together the extra-virgin olive oil, apple cider vinegar, honey or maple syrup, salt, and pepper in a separate bowl.
  5. Combine the dressing with the salad ingredients, tossing thoroughly to coat.
  6. Taste and adjust seasoning with more salt or pepper as needed.
  7. Let the salad sit for 10-15 minutes to allow the flavors to meld.
  8. Serve the salad on individual plates or in a large serving bowl, and enjoy it fresh!

Notes

This salad can be paired with roasted meats or grilled chicken and is best served fresh. Keep the dressing separate from the ingredients until serving for maximum crunchiness.
