A comforting apple cinnamon loaf perfect for autumn gatherings, capturing warmth and nostalgia in every slice.

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9 x 4 inch baking tin by greasing it and lining with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, salt, and ground cinnamon in a bowl until well combined, and set aside.
  3. Cream the butter and granulated sugar using an electric mixer until light and fluffy.
  4. Add the eggs one at a time to the creamed mixture, mixing well after each addition.
  5. Stir in the vanilla extract until fully combined.
  6. Combine half of the dry ingredients into the wet mixture, then gradually add the buttermilk, mixing gently until fully incorporated.
  7. Prepare the diced apples by tossing them with brown sugar and a sprinkle of cinnamon.
  8. Layer half of the batter into the prepared tin, sprinkle half of the apple mixture on top, and swirl gently. Repeat with the remaining batter and apples.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool the loaf in the tin for about 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

Best served with butter, cream cheese, or a scoop of vanilla ice cream. Store leftovers in an airtight container for up to 3 days.
