A warm and hearty soup perfect for cold winter days, filled with potatoes, carrots, and aromatic herbs.

Ingredients

  • 4 cups potatoes, diced
  • 2 cups carrots, sliced
  • 1 onion, chopped
  • 4 cups vegetable or chicken broth
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 cup heavy cream (optional)

Instructions

  1. Sautéing the onions: In a large pot, melt butter over medium heat. Add onions and cook until translucent.
  2. Mixing in the vegetables: Add potatoes, carrots, salt, pepper, and thyme; stir for a couple of minutes to coat everything in that delightful butter.
  3. Combining with broth: Pour in the broth and bring the mixture to a boil. Reduce heat and let it simmer for about 20-25 minutes or until the vegetables are tender.
  4. Creamy final touch (optional): If desired, stir in heavy cream before serving to give it that extra creaminess.
