Delicious and simple Valentine ganache cookies that are perfect for expressing love and affection.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips (for the ganache)
  • 1/4 cup heavy cream (for the ganache)
  • Pink sprinkles (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
  3. Beat the softened butter and sugar together until creamy and light.
  4. Add in the egg and vanilla extract, beating until the mixture is smooth and well-combined.
  5. Gradually mix in the dry ingredients, stirring until just combined.
  6. Fold in the chocolate chips, making sure they are evenly distributed throughout the cookie dough.
  7. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the lined baking sheet.
  8. Bake for about 10-12 minutes, until the edges are set but the centers are still soft.
  9. Once baked, remove the cookies from the oven and let them cool on the baking sheet.
  10. While the cookies are cooling, prepare your ganache by heating the heavy cream in a small saucepan.
  11. Remove from heat and stir in the semi-sweet chocolate chips until melted and smooth.
  12. Once the cookies are cooled, spread a generous dollop of ganache on the bottom of one cookie and top it with another.
  13. Sprinkle some pink sprinkles on top for a festive touch.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Freeze for up to 3 months.
