  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter (or vegan alternative)
  • 4 large eggs (or flax eggs for vegan)
  • 1 cup buttermilk (or plant-based milk with vinegar for vegan)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup toffee bits
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch cake pan.
  2. Cream together the butter and sugar until fluffy.
  3. Add in the eggs one at a time, mixing well after each.
  4. Stir in the buttermilk and vanilla extract.
  5. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Mix the dry ingredients into the wet mixture until just combined.
  7. Fold in the toffee bits.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
  11. Dust with powdered sugar before serving.
