Delicious sandwiches featuring perfectly seasoned chicken, sautéed vegetables, and gooey provolone cheese, all tucked into a warm hoagie roll.

Ingredients

  • 1 lb chicken breast, sliced
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • Salt and pepper to taste
  • 8 oz provolone cheese, sliced
  • 4 hoagie rolls

Instructions

  1. Heat the olive oil in a skillet over medium heat until it shimmers.
  2. Add the sliced chicken to the skillet. Season with salt and pepper. Sauté until the chicken is cooked through, about 5-7 minutes.
  3. Toss in the sliced onions and both bell peppers. Sauté until softened, about 4-5 minutes.
  4. Layer the sliced provolone cheese atop the chicken and vegetables. Cover the skillet to melt the cheese.
  5. Toast your hoagie rolls if desired for a crunchy exterior.
  6. Fill each toasted hoagie roll with the chicken, onion, and pepper mixture.
