  • 4 large eggs
  • 1 cup cheese curds
  • 1 cup gravy
  • 1/2 cup unsalted butter
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Start by cooking the French fries according to package instructions until they are golden and crispy.
  2. While the fries are baking, let’s make the creamy hollandaise sauce. In a heatproof bowl, whisk together the egg yolks and lemon juice until combined and pale.
  3. In a saucepan, melt the unsalted butter over medium heat until it’s foamy and hot.
  4. Gradually pour the hot butter into the egg mixture while whisking constantly. Continue whisking until the sauce thickens, then season it with salt and pepper to taste.
  5. In a separate pot, bring water to a gentle simmer and poach the eggs to your desired doneness.
  6. Place the crispy fries on a serving plate, generously top them with cheese curds, and ladle over the hot gravy. Carefully place the poached eggs on top.
  7. Finish this masterpiece by drizzling the creamy hollandaise sauce over everything. Sprinkle with chopped chives for a pop of color and freshness. Serve immediately.

Notes
