  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh basil leaves, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Gather your ingredients—make sure they are vibrant and full of flavor!
  2. Prepare the quinoa or couscous according to package instructions, then let it cool.
  3. Chop the cherry tomatoes, cucumber, and red onion.
  4. Combine the cooled quinoa or couscous with the chopped vegetables, olives, and crumbled feta cheese in a large bowl.
  5. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl.
  6. Dress the salad mixture with the dressing and toss until well-coated.
  7. Add chopped fresh basil and give it a gentle toss.
  8. Chill for about 10 minutes before serving to allow flavors to meld.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Keep dressing separate if necessary.
