Delicious coffee-cake banana muffins topped with a crunchy streusel, perfect for breakfast or a snack.

  • 2 ripe bananas
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup sour cream
  • 1/2 cup chopped nuts (optional)
  • 1/3 cup flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 2 tbsp softened butter (for streusel)
  • 1/2 tsp cinnamon (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the bananas, sugar, brown sugar, vegetable oil, egg, and vanilla extract in a large bowl and mash until smooth.
  3. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
  4. Gradually add the dry ingredients to the banana mixture, alternating with the sour cream, and stir gently until just combined.
  5. Fold in the chopped nuts if using.
  6. Mix the flour, brown sugar, butter, and cinnamon in a small bowl to create the streusel topping.
  7. Spoon the batter into the muffin liners, filling them about 2/3 full.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

For best flavor, use extra ripe bananas. You can also substitute the nuts with chocolate chips or dried fruit.
