A comforting Taco Rice Bowl combining seasoned ground meat, fluffy rice, and vibrant bell peppers for a delightful meal.

Ingredients

  • 1 cup long-grain white rice
  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup bell peppers, diced (mix of colors)
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • ½ cup sour cream

Instructions

  1. Cook the rice according to package instructions, letting it fluff up and soak in all those cozy flavors.
  2. Brown the ground meat in a skillet over medium heat, draining any excess fat.
  3. Add taco seasoning and a splash of water to the meat, stirring well. Let it simmer for 5 minutes to combine all those delicious spices.
