A comforting Taco Bake Casserole layered with seasoned ground beef, vibrant bell peppers, and topped with crispy tortilla chips and melted cheese.

Ingredients

  • 1 lb lean ground beef
  • 1 oz taco seasoning (1 packet)
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (any color)
  • 15 oz can black beans, rinsed and drained
  • 1 cup tomato sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 2 cups crushed tortilla chips
  • 1 avocado, sliced
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare a baking dish by lightly greasing it.
  2. Brown the ground beef along with the chopped onion in a skillet over medium heat until no longer pink. Drain excess fat.
  3. Stir in the taco seasoning, black beans, and bell peppers. Heat through until well combined and peppers are tender.
  4. Layer half of the beef mixture in the prepared baking dish.
  5. Spread half of the tomato sauce over the meat layer evenly.
  6. Sprinkle half of the shredded cheese on top of the tomato sauce.
  7. Repeat the layers with the remaining meat mixture, tomato sauce, and cheese.
  8. Top the casserole with crushed tortilla chips.
  9. Cover with foil and bake for about 25 minutes.
  10. Remove the foil and bake for an additional 5 minutes until cheese is bubbly and chips are crispy.
  11. Serve warm, topped with avocado slices and sour cream.
