A hearty and cheesy casserole combining the flavors of tacos in a comforting dish.

  • 1 lb lean ground beef
  • 1 oz taco seasoning (1 packet)
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (any color)
  • 15 oz can black beans, rinsed and drained
  • 1 cup tomato sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 2 cups crushed tortilla chips
  • 1 avocado, sliced
  • ½ cup sour cream

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it or spraying it with non-stick spray.
  2. In a skillet over medium heat, brown the ground beef along with the chopped onion until the meat is no longer pink. Once cooked, drain excess fat to keep the dish from becoming greasy.
  3. Stir in the taco seasoning, black beans, and bell peppers into the skillet. Heat through until everything is well combined and fragrant.
  4. In the prepared baking dish, layer half of the meat mixture, followed by half of the tomato sauce, and then top it with half of the shredded cheese. Repeat this layering process so you have a hearty structure for your casserole.
  5. Top the casserole with crushed tortilla chips. This will provide that wonderfully crispy texture that perfectly contrasts with the creamy layers beneath.
  6. Cover the dish with foil and bake for about 25 minutes. After this time, remove the foil and bake for an additional 5 minutes, allowing the cheese to become bubbly and the chips to crisp up beautifully.
  7. Once the casserole is done baking, let it cool slightly before serving. Garnish generously with sliced avocado and a dollop of sour cream on top for that extra creamy finish.

Notes

Consider adding corn or diced jalapeños for extra flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
