A comforting and delicious skillet dish featuring sautéed sweet potatoes, BBQ chicken, and melted cheese, perfect for family gatherings.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook until they begin to soften, about 10 minutes.
  2. Add the diced onion to the skillet and cook until translucent, infusing the air with their sweet aroma.
  3. Push the sweet potatoes and onion to the side of the skillet and add the chicken pieces. Season generously with garlic powder, salt, and pepper.
  4. Cook the chicken until it’s no longer pink, about 5-7 minutes, stirring occasionally to brown all sides.
  5. Pour in the BBQ sauce, stirring everything together so that the flavors meld beautifully.
  6. Sprinkle the cheese over the top and cover the skillet until the cheese melts, about 2-3 minutes, creating a gooey topping everyone will love.
  7. Remove from heat, garnish with chopped green onions if desired, and serve warm straight from the skillet.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave until heated through.
