A comforting embrace on a plate, this Sun Dried Tomato Pasta features a rich, creamy sauce with sun-dried tomatoes and garlic, bringing a taste of Italy to your kitchen in just 25 minutes.

  • 8 oz pasta (penne or fettuccine)
  • 1 cup sun-dried tomatoes (packed in oil)
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, torn

Instructions

  1. Cook the pasta according to package instructions until al dente. This usually takes about 8-10 minutes. Drain the pasta and reserve 1 cup of pasta water.
  2. Sauté the garlic in a large skillet over medium heat with the extra virgin olive oil until fragrant, about 1 minute.
  3. Add the sun-dried tomatoes to the skillet and sauté for about 2 minutes until heated through.
  4. Pour in the heavy cream and let it simmer for around 5 minutes until slightly thickened.
  5. Incorporate the grated Parmesan cheese, stirring until it melts into the sauce.
  6. Combine the drained pasta with the sauce, adding reserved pasta water to reach the desired consistency.
  7. Finish with the torn fresh basil leaves for added flavor.

Notes

Use quality sun-dried tomatoes packed in oil for enhanced flavor. Feel free to add sautéed spinach or mushrooms for extra veggies.
