  • 1 cup corn (fresh or canned)
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat until it shimmers.
  2. Season the diced chicken breast with chili powder, cumin, salt, and pepper. Add to the skillet and cook until fully cooked, about 7-10 minutes.
