A delightful bite-sized tribute to classic strawberry shortcake, these truffles feature creamy strawberry goodness coated in silky white chocolate.

  • 1 pound strawberries, hulled
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed shortbread cookies
  • 8 ounces white chocolate, melted
  • Sprinkles or additional crushed cookies for coating

Instructions

  1. Puree the strawberries until smooth in a blender or food processor.
  2. Combine the pureed strawberries, cream cheese, powdered sugar, and vanilla extract in a bowl.
  3. Fold in the crushed shortbread cookies until fully integrated.
  4. Chill the mixture for about 30 minutes to firm up.
  5. Form the mixture into small balls after chilling.
  6. Coat each ball in melted white chocolate, then roll in sprinkles or crushed cookies.
  7. Set the truffles on a baking sheet lined with parchment paper and refrigerate until the chocolate hardens.
  8. Serve chilled and enjoy!

Notes

Make sure to use softened cream cheese for a smooth mixture. Chill the mixture for easier shaping into truffles.
