A delightful twist on classic strawberry cake, this Strawberry Earthquake Cake features rich cream cheese swirls and a burst of fresh strawberries.

  • 1 package of strawberry cake mix
  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 3 large eggs
  • 1 cup of strawberries, chopped
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup milk
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing and flouring it.
  2. Combine strawberry cake mix, water, vegetable oil, and eggs in a large mixing bowl until smooth.
  3. Pour the batter into the prepared baking dish, spreading it evenly.
  4. Beat together cream cheese, powdered sugar, and milk until smooth in a separate bowl.
  5. Drop dollops of the cream cheese mixture over the batter.
  6. Swirl the cream cheese mixture into the batter with a knife for a marbled effect.
  7. Sprinkle shredded coconut and chopped nuts on top, if desired.
  8. Bake for 35-40 minutes, checking for doneness with a toothpick.
  9. Cool the cake in the pan before serving.
