  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. Whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, and salt.
  3. Mix the softened cream cheese, milk, vegetable oil, and egg until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped strawberries gently.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.
