This decadent stuffed French toast combines the classic comfort of French toast with a creamy cheesecake filling and juicy strawberries.

Ingredients

  • 4 slices of thick bread (such as brioche or challah)
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon cinnamon
  • Butter, for cooking
  • Maple syrup, for serving

Instructions

  1. Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture on two slices of bread and top with sliced strawberries.
  3. Place the other slices of bread on top to form sandwiches.
  4. Whisk together the eggs, milk, and cinnamon in another bowl.
  5. Heat a skillet over medium heat and add butter until melted.
  6. Dip each sandwich into the egg mixture, coating both sides well.
  7. Cook the sandwiches in the skillet until golden brown on both sides, about 3-4 minutes per side.
  8. Serve warm with maple syrup drizzled generously on top.

Notes

Use slightly stale bread for better absorption of the egg mixture. You can also mix and match toppings to suit your taste.
