Spinach Stuffed Chicken

A comforting dish featuring chicken breasts stuffed with creamy spinach and cheese filling, perfect for a cozy dinner.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach leaves
  • 4 oz cream cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Add fresh spinach into the skillet and cook until wilted, around 2 minutes.
  4. Combine sautéed spinach mixture with cream cheese and half of the Parmesan in a bowl. Season with salt and pepper.
  5. Slice each chicken breast to create a pocket without cutting all the way through.
  6. Stuff each chicken pocket with the spinach mixture, securing with toothpicks if necessary.
  7. Place the stuffed chicken in the prepared baking dish and sprinkle remaining Parmesan on top.
  8. Bake for 25-30 minutes, until the internal temperature reaches 165°F (75°C).

Notes

For a touch of heat, consider adding crushed red pepper flakes to the spinach mixture. You can substitute spinach for kale or cream cheese for Greek yogurt or ricotta.
