A cozy and comforting spicy potato soup with a Cajun twist, perfect for chilly days.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Instructions

  1. Sauté the vegetables in olive oil over medium heat until soft and fragrant.
  2. Add the diced potatoes and vegetable broth, bring to a boil, then simmer until potatoes are tender.
  3. Stir in Cajun seasoning and milk (or cream), cooking for another 5 minutes.
  4. Puree the soup with an immersion blender, or leave some chunks for texture.
  5. Season with salt and pepper to taste, adjusting as needed.
  6. Serve hot, garnished with chopped green onions.

Notes

For extra flavor, add smoked paprika or hot sauce. This recipe is naturally gluten-free.
