  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large tortillas
  • Ranch dressing or salsa for serving

Instructions

  1. Combine the chicken mixture: In a large bowl, combine shredded chicken, black beans, corn, diced tomatoes, red onion, cheese, cilantro, lime juice, chili powder, salt, and pepper. Mix well to create a colorful and appetizing filling.
  2. Prepare the tortillas: Lay out the tortillas on a clean surface or large plate, preparing for assembly.
  3. Fill the tortillas: Divide the chicken mixture evenly among the tortillas, making sure to leave some room at the edges to facilitate rolling.
  4. Roll each wrap tightly, folding in the sides as you go, to form a secure wrap that holds all the deliciousness inside.
  5. Cut and serve: Cut the wraps in half and serve them immediately with ranch dressing or salsa for dipping.
