These crispy egg rolls are filled with tender pulled pork or chicken, zesty coleslaw, and barbecue sauce, making them a perfect party snack or cozy dinner dish.

Ingredients

  • Egg roll wrappers
  • Pulled pork or shredded chicken
  • BBQ sauce
  • Coleslaw mix
  • Vegetable oil (for frying)
  • Salt and pepper (to taste)

Instructions

  1. Combine BBQ Filling: In a bowl, mix together the pulled pork or chicken and BBQ sauce until well combined.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface. Place a small amount of the BBQ mixture and a handful of coleslaw mix in the center.
  3. Roll & Seal: Fold the sides over the filling and roll tightly. Seal the edges with a small amount of water.
  4. Heat the Oil: Heat vegetable oil in a deep pan over medium heat.
  5. Fry the Egg Rolls: Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes.
  6. Season & Serve: Drain on paper towels and season with salt and pepper. Serve hot.
