Comforting and simple Slow Cooker Mississippi Pot Roast featuring tender chuck roast, tangy pepperoncini, and savory seasonings.

  • 3 lbs chuck roast
  • 1 cup low-sodium beef broth
  • 6 oz pepperoncini peppers (with juice)
  • 1 oz Au Jus gravy mix (1 packet)
  • 1 oz ranch dressing mix (1 packet)
  • Fresh parsley for garnish

Instructions

  1. Pat the chuck roast dry with paper towels and season generously with salt and pepper.
  2. Heat oil in a skillet over medium-high heat and sear the roast for 4-5 minutes on each side until browned.
  3. Transfer the seared roast to the slow cooker, pour in the beef broth, and add pepperoncini peppers along with their juice.
  4. Mix Au Jus gravy and ranch dressing mix in a small bowl, then sprinkle over the roast in the slow cooker.
  5. Cover and cook on low for 8 hours or high for 4 hours until tender.
  6. Shred the meat using two forks and serve hot over mashed potatoes or crusty bread, garnished with fresh parsley.
