A vibrant dish of spaghetti coated in a luscious lemony sauce, perfect for a quick weeknight dinner or an elegant gathering.

Ingredients

  • 8 ounces spaghetti or linguine
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 1 large lemon (about 2 tablespoons juice)
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Don’t forget to reserve about 1 cup of that lovely pasta water before draining!
  2. Sauté the Garlic: In a large pan, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about a minute until fragrant.
  3. Add the Lemon Zest and Juice: Stir in the lemon zest and juice, seasoning with salt and pepper to your liking.
  4. Combine the Pasta: Add the drained pasta to the pan and toss it with the lemon-garlic mixture. Gradually add the reserved pasta water to achieve your desired creaminess.
  5. Incorporate the Parmesan: Remove the pan from heat and mix in the freshly grated Parmesan cheese.
  6. Garnish and Serve: Sprinkle with fresh basil or parsley for a splash of color and serve immediately.

Notes

Adjust seasoning to taste and use reserved pasta water to achieve a creamy sauce.
