A simplistic and flavorful dish featuring tender chicken, colorful peppers, and aromatic spices, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 bell peppers (1 red, 1 green)
  • 1 large onion
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Slice the chicken into thin strips.
  3. Chop the bell peppers and onion into bite-sized pieces.
  4. In a bowl, combine the sliced chicken with olive oil, cumin, chili powder, garlic powder, salt, and pepper. Toss to coat.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake for 20-25 minutes until the chicken is cooked through and golden brown.
  7. Drizzle with lime juice before serving.

Notes

Leftover fajitas can be stored in an airtight container in the fridge for up to 3 days. To reheat, use a skillet or microwave until hot.
