A light and refreshing salad featuring crunchy vegetables and flavorful ramen noodles, tossed in a tangy dressing.

Ingredients

  • 2 cups mixed vegetables (like bell peppers, carrots, and cucumbers)
  • 3 green onions, sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup sesame oil
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Cook the ramen noodles according to package instructions, drain, and let cool.
  2. Combine the cooled noodles with mixed vegetables, green onions, and cilantro.
  3. Whisk together sesame oil, soy sauce, rice vinegar, and sugar in a small bowl.
  4. Pour the dressing over the salad and toss to combine.
  5. Sprinkle with sesame seeds if desired.
  6. Serve chilled or at room temperature.

Notes

To prevent noodles from sticking, toss them with a small amount of oil after draining.
