Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • ½ cup whole milk (or dairy-free alternative)
  • ½ cup unsalted butter, softened
  • 2 tsp pure vanilla extract
  • Gel food coloring (various colors)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with colorful liners.
  2. Mix the flour, sugar, baking powder, and salt until well combined.
  3. Beat the eggs until frothy, then add in the milk, melted butter, and vanilla extract.
  4. Combine the wet mixture with the dry ingredients, stirring gently.
  5. Divide the batter into bowls and mix in gel food colors.
  6. Layer the colored batter into each cupcake liner until two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool the cupcakes completely before frosting with your favorite buttercream icing.

Notes

Store leftover cupcakes in an airtight container at room temperature for up to 3 days. Unfrosted cupcakes can be frozen for up to 2 months.
