  • 1 cup Granulated Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Pistachios (coarsely chopped)
  • 1/2 cup Unsalted Butter (softened)
  • 2 large Eggs
  • 1/2 cup Milk (whole)
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Powdered Sugar (for frosting)
  • 1/2 cup Butter (softened for frosting)
  • 1/2 cup Pistachio Paste

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with colorful liners.
  2. Whisk together the flour, baking powder, salt, and chopped pistachios in a medium bowl.
  3. Beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs, one at a time, while mixing on low speed, then add vanilla extract.
  5. Gradually add the dry ingredients into the wet mixture, alternating with the milk, stirring until just combined.
  6. Fill each cupcake liner about two-thirds full with the batter.
  7. Bake for 18-20 minutes, or until golden brown and a toothpick comes out clean.
  8. Allow the cupcakes to cool completely before frosting them with pistachio frosting.

Ensure ingredients are at room temperature for best results. Store in an airtight container for up to 3 days or freeze without frosting for up to a month.
