Ingredients

Scale
  • 1 cup basmati rice
  • 1 pound chicken thighs, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 1 can coconut milk
  • 2 teaspoons turmeric
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Juice of 1 lime

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. Sauté the chopped onions in a large pot over medium heat until golden brown.
  3. Add the minced garlic and grated ginger, cooking until fragrant—about 1 minute.
  4. Brown the chicken pieces, seasoning with salt and pepper, until browned on all sides.
  5. Incorporate the diced tomatoes and sliced bell pepper; cook for another 5 minutes.
  6. Sprinkle in the turmeric, cumin, coriander, and paprika; stir well.
  7. Pour in the coconut milk, stirring until everything is well combined.
  8. Add the rinsed rice, stirring gently to distribute evenly.
  9. Simmer with 2 cups water or chicken broth, bring to a boil, then reduce heat and cover for about 20 minutes.
  10. Fluff the rice with a fork, squeezing the lime juice over the top and garnishing with fresh cilantro.
