  • 1 cup onion (diced)
  • 1 cup bell peppers (diced)
  • 2 cloves garlic (minced)
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup provolone cheese (shredded)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onions and bell peppers; sauté until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for 1-2 minutes until fragrant, stirring to avoid burning.
  3. Brown the thinly sliced beef in the pot until browned, about 5-6 minutes.
  4. Pour in the beef broth and bring the mixture to a simmer to meld the flavors together.
  5. Stir in the heavy cream and bring the soup back to a gentle simmer.
  6. Add the provolone cheese and stir until melted.
  7. Season with salt and pepper to taste, adjusting as needed.
