  • 1 lb chicken sausage (Italian or spicy)
  • 1 cup orzo pasta
  • 1 cup diced bell peppers (red and yellow)
  • 1 medium zucchini, sliced thinly
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp dried oregano
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat a large oven-safe skillet over medium heat and add olive oil. Sauté the sliced chicken sausage until browned, about 5 minutes.
  3. Add the diced bell peppers, zucchini, and minced garlic; sauté until softened, about another 5 minutes.
  4. Stir in the uncooked orzo pasta and oregano until well combined.
  5. Pour in the chicken broth, bring to a gentle boil, reduce heat, cover, and simmer for 10-12 minutes until orzo is tender.
  6. Let sit for 5 minutes before serving, garnished with fresh herbs if desired.
