  • 1 pound chicken breast, cooked and shredded
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • 1 cup fresh spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add carrots, celery, onion, and garlic; sauté until the vegetables are tender.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the shredded chicken and gnocchi to the pot.
