Deliciously nostalgic muffins featuring ripe bananas and a delightful swirl of Nutella.

Ingredients

  • 3 ripe bananas
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup Nutella

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth.
  3. Mix in the sugar and softened butter until creamy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Whisk together the baking soda, salt, and flour in a separate bowl.
  6. Combine the dry and wet ingredients, stirring until just mixed.
  7. Fill each muffin cup halfway with the batter, then add a spoonful of Nutella on top.
  8. Swirl the Nutella into the batter using a toothpick.
  9. Add more batter to the muffin cups and top with additional Nutella.
  10. Bake for 18-20 minutes, or until a toothpick comes out clean.
  11. Cool the muffins in the tin for a few minutes before transferring to a wire rack.

Notes

For a healthier spin, substitute half the sugar with applesauce or try whole wheat flour.
