A comforting dish featuring tender chicken in a creamy mushroom sauce that brings joy to your dinner table.

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 2 tbsp low-sodium soy sauce
  • 1 cup chicken broth
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare the Ingredients: Start by chopping the garlic and slicing the mushrooms.
  2. Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Season the chicken breasts generously with salt and pepper. Sear each breast for about 5-7 minutes on both sides until they develop a golden brown crust. Once done, remove them from the skillet and set aside.
  3. Sauté the Mushrooms: In the same skillet, add the sliced mushrooms. Sauté them for about 5 minutes until browned and natural juices are released. In the last minute, add minced garlic.
  4. Add the Sauce Components: Pour in the soy sauce and chicken broth. Scrape up any brown bits stuck to the bottom of the pan and let it simmer.
  5. Create the Creamy Sauce: Reduce heat to low and stir in the heavy cream and chopped thyme. Simmer for about 3 minutes until the sauce thickens.
  6. Combine and Finish: Return the seared chicken to the skillet and coat it well with the creamy sauce. Let it simmer for an additional 5 minutes to ensure the chicken is heated through.

Notes

Cook the chicken in batches to prevent overcrowding the skillet and ensure an even sear.
