A creamy and delicious Mushroom Chicken dish that combines tender chicken with sautéed mushrooms in a rich sauce.

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 2 tbsp low-sodium soy sauce
  • 1 cup chicken broth
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare Your Ingredients by chopping garlic and slicing mushrooms.
  2. Sear the chicken in a skillet with olive oil, seasoned with salt and pepper, for about 5-7 minutes.
  3. Sauté the sliced mushrooms in the same skillet until browned, adding garlic for the last minute.
  4. Deglaze the pan with soy sauce and chicken broth, scraping brown bits and simmering.
  5. Create the creamy sauce by adding heavy cream and thyme, simmering until it thickens.
  6. Finalize the dish by returning the chicken to the skillet and coating it with the sauce, simmering for an additional 5 minutes.

Notes

Make sure not to overcrowd your skillet when sautéing to prevent steaming instead of browning. Adjust the richness by using half-and-half instead of cream if desired.
